Chicken Pepperonata

Ingredients

1 long red chilli de-seeded and sliced
4-6 spring onions chopped or 1 large onion chopped
2-3 large garlic cloves minced
4 big button mushrooms chopped
2 small or 1 normal sized courgette cut into small-ish chunks
1 each of a small red and small yellow peppers cut into thin strips
8 mini chicken breast fillets (free range from RED BARN of course!)
1-2tbsp garlic
oil
1 heaped tsp dried mixed herbs
1 tbsp tomato pure
Can of tomatoes
1 dsp red wine vinegar
Squirt of balsamic vinegar syrup
1/2 tsp good quality smoked paprika
Cracked black pepper
Parmesan to top

Method

Serves: 2 hungry people! Double recipe for more

• Heat the oil on medium-low heat in a large frying pan Add the spring onion and chilli, when softened, add in the garlic
• Add the mushrooms and courgettes and cook until all softened
• Add in the sliced peppers, cook for a couple of minutes than add the chicken turning all the ingredients well in the pan
• Add the tomato pure, tomatoes, herbs, paprika, balsamic and Red Wine Vinegar and season with plenty of cracked black pepper
• Mix well, put the lid or foil over the pan and cook on gentle heat until the chicken is cooked
