Yellow mozzarella cheese, often a low-moisture variety that is either aged or colored with annatto, is a highly versatile, firmer, and less watery alternative to fresh white mozzarella. Its excellent melting properties and savory, slightly nutty flavor make it ideal for high-heat cooking.
