Schmaltz or schmalz or shmalz is rendered, chicken or goose fat used for frying or as a spread on bread. There is NOTHING quite like it for cooking really tasty foods.
We take the chicken skins and slowly heat them to extract the oil which is then separated by filtering through a muslin cloth.
There is nothing artificial in our chicken butter, it is pure and natural, just like our grandma used to make it. Keep it in the fridge!
