Rendering:
Cut fat into small pieces, cook slowly on low heat for 4–6 hours (or in a slow cooker), and strain through cheesecloth.
Storage:
Once rendered and strained, tallow should be stored in a jar. It is shelf-stable, but it lasts longer when kept in the fridge or freezer.
